The secret is that there’s zucchini and juicy red apple in them so they’re the perfect way to slip in some extra fruits and vegetables. Our Apple Zucchini Mini Muffins make the perfect Healthy Snacks.

Ingredients

  •    50 percent cup honey
  •    ¼ teaspoon salt
  •     ½ teaspoon ground cinnamon
  •    1 teaspoon baking soda
  •    3 tablespoons butter, melted and cooled
  •    1 cup white whole wheat flour
  •    1 large egg, beaten
  •    1 apple finely chopped
  •    1 cup grated zucchini
  •    1 teaspoon vanilla extract

Instructions

  •    Heat oven to 76°C and coat a mini muffin cooking pan with nonstick cooking spray.
  •    Mix thecinnamon, flour, baking soda, and salt in a mixing bowl and whisk until thoroughly combined. Set aside.
  •    In a large mixing bowl, stir together the butter, honey, egg, and vanilla extract.
  •    Add the flour mixture to the wet ingredients and stir together until just barely combined.
  •    Add the zucchini and apples gently until they are combined
  •    Fill each cup in the mini muffin pan approx ¾ full.
  •    Bake for 14-19 minutes or until a toothpick added in the centre of a muffin comes out clean.
